Amaranth is often considered an ancient grain as it has been cultivated for over 8,000 years in South and Central America. It was a common staple food for many pre-Columbian civilizations like the Aztecs. Interestingly though, it is technically not considered as grain as well. It actually belongs in the same botanical family as spinach, chard and beets!
Instructions: Rinse and soak a few hours or overnight. Rinse. To prepare this wild and woody flavored seed, add 1 cup to 2 1/2-3 cups water. Bring to a boil. Cover and simmer for about 20 minutes until water is absorbed and grain is fluffy. Use as an entree, add to soups or stews or substitute for rice. For porridge, add more water and cook a bit longer.
